Baking soda is sodium bicarbonate, NaHCO3.Baking powder is a dry mix of baking soda and sodium hydrogen tartrate, NaH(C4H4O4), (sometimes called sodium bitartrate). The free H+ of sodium hydrogen tartrate reacts with the NaHCO3 to produce CO2 + H2O. The CO2 gas causes cake, bread, and pie dough to ';rise'; (form a kind of foam during baking). If the baker doesn't want to use baking powder, he or she can blend the dough together with yeast. The yeast is a living organism that ferments the sugar in the dough to form CO2 gas, which ';raises'; the dough.
